4tbs/60g unsalted butter
3 large eggs - separated
1.5 cups / 300g granulated sugar
10oz /300g ricotta cheese
2.5 cups / 300g all purpose flour
2 tsp baking powder
1.5 cup /120ml whole milk
Pinch of fine salt
Preheat oven to 350 F. Grease a 10-ch pie dish /cake mold with butter and dust with a little powdered sugar. See our Bitossi 10" pie mold.
In a large bowl, combine egg yolks, granulated sugar. and butter. Whisk until smooth, then add the ricotta and mix gently. Sift in the flour and baking powder and mix well. Stir in the milk.
In a separate large bowl, use a food processor or hand mixer with whisk attachment and beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the beaten egg whites int the batter. Pour the batter into the prepared cake mold
Transfer to the oven and bake until golden, 30-40 minutes. Let cool in the mold., then mold the cake., dust with powdered sugar. Top with strawberries (optional)
